1 – 85 grams Century Chunky Corned Tuna
2 tablespoons butter or cooking oil
1 medium (100g) potato, peeled and cut to strips
1 stalk onion leeks, sliced to thin strips
3 large eggs, beaten
2 tablespoons grated cheese (optional)
Dash of ground black pepper
- Place pan over medium heat. Add butter then cook potatoes until light brown in color. Stir in Century Chunky Corned Tuna and leeks, then sauté until fragrant.
- Pour beaten eggs, swirling pan to spread evenly. Allow to cook for about 1 minute or until set, but still moist. Add cheese and season with pepper.
- Fold to form a crescent (half-circle)-shaped omelette. Slide onto a plate and serve with rice or bread.
