A fried sandwich stuffed with Century Tuna meatloaf and cheese. Good for appetizers.

Tuna Meat Loaf Monte Cristo

Ingredients:

2 eggs
1/4 teaspoon salt
cooking oil for brushing
2 tablespoons mayonnaise
8 slices white bread
4 cheese singles, cut into 2
1-150 grams Century Tuna Meat Loaf, sliced into 12
3 eggs, lightly beaten
2 cups breadcrumbs
2 cups cooking oil for frying
salt to taste

Procedure:

Beat eggs until frothy then season with salt. Heat a pan then brush with a little oil. Pour beaten eggs and cook until set. Cut into 4 and set aside. Spread mayonnaise on four slices of bread. Lay half a slice of cheese, a portion of fried egg, 3 slices of tuna loaf and another half slice of cheese. Sandwich with the remaining bread slices. Slightly press sandwich and pinch edges to seal. Wrap with aluminum foil or plastic wrap and refrigerate for about 1 hour. After chilling, dip sandwiches in beaten eggs and dredge in breadcrumbs. Deep fry in hot oil until golden. Drain on paper towel and slice before serving to show filling. Serve with chips or fruit slices on the side.

Makes 4 sandwiches.
