A classic Filipino favorite with a twist. Tuna in a soy-vinegar and coconut milk marinate.

Tuna Adobo sa Gata


2 – 184 grams Century Tuna Solid in Vegetable Oil, drain and reserve oil for sautéing
1/4 cup vinegar
2 tablespoons soy sauce
1/4 cup chopped garlic
1 teaspoon cracked peppercorns
1 bay leaf
1/2 cup thick coconut cream


In a clean bowl, marinate tuna in vinegar, soy sauce, 2 tablespoons of garlic, peppercorns and bay leaf. Leave for about 30 minutes. Drain and reserve marinade. In a fry pan heat oil from tuna and brown the remaining garlic. Add tuna and cook for a minute. Add in the marinade and let cook for 5 minutes uncovered. Do not stir. Pour in the coconut cream and let cook for 2 minutes. Serve.

Makes 4 to 5 servings.
