A healthier version of kare-kare with tuna and mixed seafood in a hearty peanut sauce.
Ingredients:
1 – 2oz. pack instant kare-kare mix
2¼ cups water
¼ cup cooking oil
2 tablespoons chopped garlic
½ cup chopped onion
¼ cup ground peanuts
1 cup sliced banana heart
1 cup string bean niblets
1 large eggplant, sliced
4 medium squid, sliced into rings
¾ teaspoon salt
6 medium shrimps, cooked
8 to 10 steamed mussels on half shell
1 – 184 grams Century Tuna Red Chunks in Oil, drained
Procedure:
In a mixing bowl, dissolve kare-kare mix in water. Mix well until smooth, set aside.
Heat oil in a pan. Sauté garlic and onion. Pour-in peanut sauce mixture and ground peanuts. Stir continuously until slightly thick. Add banana heart, string beans and eggplant. Cover and cook for about 3 minutes or until vegetables are tender. Add squid and allow to cook for about 1 minute. Season with salt according to taste. Add tuna, shrimps and mussels. Cook for another minute or until heated through. Remove from heat and serve with sautéed shrimp bagoong.
Makes 5 to 6 servings.
