The classic Nicoise salad of tuna, olives and green beans now with pasta for complex carbs.

Nicoise Tuna Pasta Salad


500 grams cooked rotini spiral pasta (from 250 grams uncooked)
4 cups mesclun salad mix
1-184 grams Century Tuna Solid in Water – drained
1/2 cup chopped deseeded fresh tomatoes
1 cup blanched green beans (abitsuelas or Baguio beans)
3 tablespoons sliced black olives
2 hard cooked eggs – sliced
1/2 cup bottled raspberry vinaigrette dressing


In a large bowl, combine the pasta, mesclun, Century Tuna, tomatoes, green beans, olives and eggs. Add dressing and toss to coat thoroughly. Portion into four chilled plates. Serve immediately.

Makes 4 servings.
