Greek-style tuna wrap with crunchy veggies, herbs and yoghurt.

Century Tuna Greek Style Pita

Ingredients:

Tuna Filling:

2-180 grams Century Tuna Flakes in Vegetable Oil, drained
1/3 cup thick plain yogurt
½ teaspoon grated garlic
¼ teaspoon ground cumin
½ teaspoon lemon juice
Pinch of chili powder
¼ teaspoon salt
Pinch of pepper
1 tablespoon chopped flat leaf parsley
½ tablespoon chopped basil leaves

Tossed salad:

¼ cup sliced tomato
½ cup sliced cucumber
¼ cup thinly sliced red onion
¼ cup sliced black olives
1 tablespoon olive oil
½ teaspoon lemon juice
¼ teaspoon dried oregano
Pinch of salt
Pinch of pepper
¼ cup crumbled feta cheese
6 pieces pita bread

Procedure:

In a bowl, mix together Century Tuna Flakes, yogurt, garlic, cumin, lemon juice, chili powder, pepper, parsley and basil. Cover and chill until ready to use. In another bowl, toss together tomato, cucumber and red onion. In a cup combine olive oil, lemon juice, oregano, salt and pepper. Mix well and pour over salad then toss again. Heat pita bread in a pan or open flame until a little brown on both sides. Slit open the pita then fill with tossed salad and tuna filling.

Makes 6 servings.
