Everybody’s favorite Friday ulam of sauteed mung beans packed with more protein from tuna.

Century Tuna Ginisang Munggo

Ingredients:

1 125 grams Century Tuna Flakes in Oil
3 cloves garlic, peeled and chopped
1 small onion, chopped
1 medium tomato, diced
3 cups cooked munggo (from 1/4 kilo beans)*
1 to 2 tablespoons patis, according to taste
1/4 teaspoon ground black pepper
2 small eggplant, sliced
1 bundle dahon ng malunggay

Procedure:

In a medium-sized pot, combine Century Tuna Flakes with its oil and broth, garlic, onion and tomato. Cover and simmer until tomatoes turn soft. Add cooked mungo beans, cover and cook for 10 minutes. Season to taste with patis and pepper. Add eggplant and malunggay then cook for another 5 minutes. Remove from heat and serve.

Serves 5 to 6.

* To cook mungo, combine ¼ kilo mungo beans with 3 cups water in a medium-sized pot. Place over high heat and let boil. Turn heat to low then simmer for at least 30 minutes or until beans are very tender. Remove from heat and set aside.
