Century Tuna Four Seasons Siomai

Ingredients:

1 – 184 grams Century Tuna Chunks in Vegetable Oil, drained
1/2 cup chopped shrimp meat
1/4 cup chopped carrots
1/4 cup chopped white onions
1/4 cup coarsely chopped water chestnuts
2 tablespoons breadcrumbs
2 tablespoons all-purpose flour
egg white
1 1/2 teaspoons sesame oil
1 teaspoon salt
siomai wrappers
sliced straw mushrooms
kani sticks, cut into chunks
cooked quail eggs
green peas

Procedure:

In a food processor*, combine tuna, shrimps, carrots, onions, water chestnuts, breadcrumbs, flour egg white and sesame oil. Pulse until mixture is finely ground. Place a tablespoon of filling at the center of a siomai wrapper. With a thumb and forefinger, pouch center of siomai to make a “waist”. Top with mushrooms, kani, quail eggs and green peas. Arrange siomai pieces in a steamer. Steam at high heat for 20 minutes.

*In the absence of a food processor, filling may be mixed with a wooden spoon.

Makes 24 pieces.
